COTTAGE PIE

Students from Arrankudiaga school in the BAsque Country sent this British recipe. They cooked it at school with the help of a school father. COTTAGE PIE. Ingredients: olive oil, 1 large onion, 2 cloves garlic, 1 small can of tomato puree, 800 gr mince meat, dried mixed herbs, salt and pepper, 4 tablespoons of sugar. For the topping: 4 large potatoes peeled and diced, 4 tablespoons of butter. Method: 1- Heat the oil in a large frying pan over medium high heat. Add the chopped onion, the crushed garlic and the chopped green pepper and cook over a medium heat until soft. Add pieces of mince and cook to brown. 2- Add the can of tomato puree and the mixed herbs and sugar. Season to taste with salt and pepper. Cover the simmer for 30 minutes. 3- Meanwhile, boil the potatoes in water until soft. Drain and mash with the butter. Season with salt and pepper to taste. 4- Preheat the oven to 190ºC/ gas mark 5 5- Put mince into a pyrex dish and spread potatoe puree on top.
