ERDÄPFELPUFFER (POTATO FRITTERS)
This recipe was worked out by 11 year old students from Zubialde school in the Basque Country with the help of a German- Basque citizen that kindly offered himself to cook with the children. It was great fun and the result was very tasty indeed.
ERDÄPFELPUFFER (POTATO FRITTERS)
Potato fritters for 5 persons:
1,5 kg potatoes
2 onions
200 g bacon
2 eggs
salt, pepper, oil
Peel the potatoes and grate them using the big holes in the grater.
Put the potato stripes on a clean kitchen towel and wring them out.
Peel the onions and cut them into cubes.
Mix the grated potatoes, the onion cubes and the eggs and add salt and pepper as you like it.
Cut the bacon into squares and fine slices of not more than two mm thick.
You first put three or four bacon slices into the hot pan.
When they start to roast add the potato mixture on top. Use a spoon to form a slice.
As soon as the potato fritters starts to turn golden brown and get crispy on the downside, turn them around.
Bon appétit!
